1. Raw Material Selection and Pretreatment

1.1 Core Raw Material Screening

Premium rice koji provides active enzymes for saccharification, while purified shochu ensures moderate alcohol content and pure flavor.

1.2 Cleaning and Steaming Treatment

The glutinous rice is thoroughly cleaned to remove sediment and impurities, then soaked and fully steamed at a constant temperature. Uniformly cooked glutinous rice helps rice koji fully decompose starch, laying a solid foundation for sufficient sugar production and mellow taste formation.

2. Saccharification, Fermentation and Termination

2.1 Low-Temperature Saccharification

After cooling, steamed glutinous rice is evenly mixed with rice koji and placed in a constant-temperature saccharification tank. Under controlled temperature and humidity, enzymes decompose rice starch into glucose and oligosaccharides, forming the unique natural sweet taste of industrial mirin.

2.2 Alcohol Addition and Fermentation Termination

After sufficient saccharification, quantitative shochu is added to the mash. The increased alcohol concentration inhibits yeast activity and stops further fermentation. 3. Aging, Filtration and Sterilization

3.1 Sealed Low-Temperature Aging

The mixed mash is sealed and aged for 2 to 6 months in a low-temperature sterile environment. The aging process harmonizes rice aroma and wine aroma, softens the taste, and eliminates miscellaneous flavors, making the mirin flavor more layered and pure.

3.2 Precision Filtration and Sterilization

After aging, the mature mash undergoes multi-stage precision filtration to remove rice residues and impurities, forming clear pale yellow mirin liquid. Pasteurization is applied to kill microorganisms without damaging flavor substances, ensuring food safety and long shelf life.

4. Aseptic Filling and Finishing

The qualified mirin liquid is automatically weighed, filled, and sealed in a dust-free aseptic workshop. After final quality inspection, labeling and packaging are completed.
