How To Make Potato Salad with Mayonnaise

Potato salad is a classic dish that never fails to please a crowd. Ingredients:

  • 4-5 yellow or red potatoes      (about 2 pounds)

  • 1/2 to 3/4 cup of TSY Food mayonnaise

  • 1 tablespoon Dijon mustard      (optional)

  • 1 teaspoon white vinegar or      apple cider vinegar

  • Salt and pepper, to taste

  • 2-3 hard-boiled eggs, peeled and      chopped (optional)

  • 1/4 cup diced celery

  • 1/4 cup diced onion (red or      white)

  • Fresh parsley or dill for      garnish (optional)


Instructions:

1.    Prepare the Potatoes: Scrub the potatoes clean and cut them into bite-sized pieces if they are large. You can leave small new potatoes whole.


2.    Cook the Potatoes: Place the potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce heat and simmer until the potatoes are tender but not falling apart, about 10-15 minutes depending on their size. Drain and let them cool slightly.


3.    Cook Eggs (Optional): If you're using eggs, place them in a saucepan and cover with cold water by an inch. Bring to a boil, then cover, remove from heat, and set aside for 10 minutes. Peel and chop once cooled.


4.    Make the Dressing: In a large bowl, whisk together the mayonnaise, mustard, vinegar, salt, and pepper. Adjust these ingredients according to your taste preference.


5.    Combine Ingredients: Add the slightly cooled potatoes to the dressing along with the chopped eggs, celery, and onions. Gently stir to combine everything without breaking down the potatoes.


6.    Chill Before Serving: Cover the potato salad and refrigerate for at least an hour before serving to allow flavors to meld. This also helps the salad to chill thoroughly, which is especially nice during warmer months.


7.    Garnish and Serve: Right before serving, sprinkle with fresh herbs like parsley or dill for extra flavor and a pop of color.
