Ingredients:

  • 2 packs (approx. 300g) Konjac Rice, rinsed and drained

  • 2 large Eggs, lightly beaten

  • 1 cup mixed Vegetables (e.g., frozen peas, corn, diced carrots)

  • 2 cloves Garlic, minced

  • 2 Spring Onions, chopped (white and green parts separated)

  • 1 tablespoon Cooking Oil (avocado or vegetable oil work well)

  • Protein (optional): 100g cooked Shrimp, Chicken, or Tofu

Cooking Steps:

  1. Dry the Konjac Rice: Thoroughly pat the konjac rice dry with a paper towel. This is a crucial step for achieving a good texture.

  2. Scramble the Eggs: Heat oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just set. Remove and set aside.

  3. Sauté Aromatics: In the same wok, add the white parts of the spring onions and minced garlic. Stir-fry for 30 seconds until fragrant.

  4. Stir-fry Base: Add the mixed vegetables (and optional protein) to the wok. Stir-fry for 2-3 minutes until heated through.

  5. Combine & Season: Add the dried konjac rice to the wok. Pour the seasoning sauce (light soy sauce and sesame oil) over the rice. Stir-fry vigorously for 2-3 minutes to combine and heat the rice.

  6. Finish: Return the scrambled eggs to the wok. Add the green parts of the spring onions and white pepper. Toss everything together for one final minute. Serve immediately.
