Stir-fried beef with dark soy sauce and broccoli (Tender and refreshing, with excellent color, aroma and taste)


Stir-fried beef with broccoli requires both the tenderness of the beef and the bright green color of the broccoli, as well as an attractive appearance. - Main ingredients: 200g beef tenderloin (the tenderloin is the tenderloin and is suitable for quick stir-frying), 300g broccoli (choose firm and non-yellowing broccoli), 5 cloves of garlic (minced), 2 slices of ginger (minced), 1 bird's eye chili (optional to enhance flavor)


- Marinade: 5ml TSY light soy sauce, 3g starch, 5ml cooking wine, 3ml cooking oil (locks in the moisture of the beef and makes it more tender)


- Seasoning: 5ml of TSY dark soy sauce (a small amount for color, not too much), 10ml of light soy sauce (for freshness), 8ml of oyster sauce (to enhance umami and viscosity), 3g of salt, 1g of sugar (to neutralize the saltiness and brighten the color), 20ml of cooking oil, 15ml of water

"Detailed Procedure


1. Preparation of beef: Wash the beef tenderloin, cut it into thin slices along the grain (cutting against the grain makes the beef more tender and prevents it from being hard to chew), put it in a bowl, add the marinade (light soy sauce, starch, cooking wine, cooking oil), mix well by hand, and marinate for 10 minutes to allow the beef to fully absorb the marinade and retain moisture.


2. Preparation of broccoli: Cut the broccoli into small florets, soak them in light salt water for 5 minutes (to remove pesticide residues and impurities on the surface), then take them out and wash them clean. Add enough water to a pot, then add 1g of salt and 3ml of cooking oil. When the water boils, put in the broccoli and blanch it for 1 minute (the blanching time should not be too long, otherwise the broccoli will turn yellow, become soft and lose its crisp texture). Take it out and put it in cold water to cool down. Drain the water and set it aside.


3. Stir-fried beef: Pour 10ml of cooking oil into a wok. When the oil is hot, add the marinated beef slices and stir-fry over high heat quickly. Stir-fry until the beef slices change color and the surface slightly curls up (about 30 seconds, do not stir-fry for too long, otherwise the beef will become tough and dry). Immediately remove and set aside.


4. Stir-fry the seasonings until fragrant: Pour another 10ml of cooking oil into the pot. When the oil is hot, add minced ginger and garlic, and bird's eye chili peppers (optional). Stir-fry over low heat until a rich garlic aroma is released. Be careful not to burn the minced garlic.


5. Stir-fry until flavorful: Add the drained broccoli and stir-fry quickly over high heat for 30 seconds. Add a little salt and stir-fry evenly to allow the broccoli to absorb flavors in advance. Next, pour back the stir-fried beef slices, add TSY dark soy sauce, light soy sauce, oyster sauce and sugar, pour in 15ml of water, and stir-fry quickly over high heat for 1 minute to evenly coat the beef and broccoli with the sauce. Then turn off the heat and serve.
